Introduction

Ingredients

    3 Zucchini
    1/2 tbsp Extra Virgin Olive Oil
    1 dash Salt
    0.25 tsp Black Pepper (Ground)
    1 clove Garlic

Tips

A mandolin or spiralizer can really help cutting the zucchini into the shape of pasta.


Directions

Slice your zucchini lengthwise on a mandolin using the juliene function, or french fry cutters with a thin grain. It will look like thick fetucini noodles.
Finely mince your glove of garlic (optional).
Heat the olive oil on medium heat in a non-stick skillet. Add zucchini and garlic and salt and pepper to taste. Saute for 6-8 minutes.
I recommend letting the zucchini drain for a minute prior to serving because the excess water will thin any sauces you plan on using.

Serve with marinara and meatballs (see my related recipe), or any sauce of your choice.

    I lightly salt my zucchini and let it sit for half an hour. Salt draws out water, making it work more like pasta. - 1/25/19
