Introduction

Ingredients

    1 tbsp Butter, salted
    6 ounces Chicken Breast (cooked), no skin, roasted
    1 can (10.75 oz) Cream of Chicken Soup
    0.50 medium (2-1/2" dia) Onions, raw
    .5 cup Milk, nonfat
    6 medium Carrots, raw
    1.5 serving Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, 1 cup/serv
    2 cup Fit N Active Cream of Chicken Soup

Directions

Melt the butter in a soup pot on medium high heat; add the sliced carrots and onion and cook approximately five minutes until they start to soften. Add the cooked chicken breast (I used left over rotisserie chicken). Next, add the cans of cream of chicken soup. I used one regular and three "fit and active" from Aldi's. The Fit n Active is pretty good, but using a can of "full flavor" soup helps boost the soup. Then add the milk (one and a half cans of milk, and one and a half cans of broth) and then use a whisk to incorporate all of the ingredients. Turn the heat down. Simmer about twenty minutes.

Serving Size: Makes approximately seven servings of one cup each
