Introduction

A simple and delicious egg salad for those who don't like relish.
I like the kick of the Creole mustard, but brown mustard is a good substitute as well.

Number of Servings: 10

Ingredients

    12 large Hard Boiled Eggs, chopped small
    Kraft Mayo Fat Free Mayo, 8 tbsp
    Yellow Mustard, 1 tsp
    Zatarain's creole mustard, 1 T
    Onions, raw, 3 T chopped (I like to use red onion)
    Celery seed, 1.5 tsp
    1/4 tsp cayenne pepper *

    * I use 1/2 tsp cayenne when using brown mustard instead of creole

Directions

Mix all ingredients together; blend well.
Serve on marbled rye with a leaf of red lettuce and a couple slices of Roma tomato.
Makes enough for appx. 12 sandwiches.
