Ingredients

Alfredo w Pasta:
Whole Wheat Spaghetti, uncooked pasta, 8 oz
Mushrooms, fresh, .5 cup, pieces or slices
Soy Milk, 1.5 cup
Butter, salted, 2 tbsp
Garlic, 2 clove minced
all-purpose, unenriched, 1tablespoon
Parmesan Cheese, grated, .5 cup
Shallots, 1 tbsp chopped/minced
Pepper, black, 1 tbsp
Salmon Croquettes:
Pink Salmon (canned), 6 oz (2 cans)
Bread, whole wheat (including toast), 2 slices bread crumbs
Mayonnaise, regular (mayo), 2 tbsp
Egg, fresh, 1 large
all-purpose, unenriched, 2 tablespoons
*vegetable Oil, 2 tablespoons
Onions, raw, .5 cup, chopped
Celery, raw, .5 cup, diced
*Lemon Juice 2 tbsp
Pepper, black, 2 tbsp
Directions
Salmon Croquettes:
Preheat oven to 350°. Drain salmon, reserving liquid. Flake salmon lightly, but well, with a fork.
Add the lemon to the reserved salmon liquid and enough cold water to make 3/4 cup liquid; add to the salmon. Add all remaining ingredients and mix thoroughly. Form into 8 patties. Bake for 25 to 30 minutes.
Cook pasta according to instruction and set aside.
Melt butter in a saucepan and saute onion or shallot and mushrooms over medium heat until translucent, reduce heat and add garlic, saute one minute.
Add remaining ingredients, cover, and simmer over low heat for 20 to 30 minutes.
