Ingredients

6 cup Sweet Corn, Fresh
4 serving Bacon, Apple Smoked, Uncured, Trader Joe's
0.5 cup, chopped Onions, raw
Directions
Remove kernels from corn cobs (easily done in a Bundt pan). Take 1/3 of corn and place in a blender or food processor until smooth. Put in a strainer over a bowl and collect the liquid. Throw away the solid portion.
Heat skillet over medium heat. Cook chopped bacon until crisp and remove. Remove almost all of the fat. Add the onion and cook until translucent. Add corn kernels and cook for 3 to 5 minutes. Add salt and pepper to taste.
Put corn liquid in a small saucepan for about 5 minutes until a thick pudding forms. Season with salt and pepper.
Combine corn, sauce, and bacon and season to taste.
Garnish with chives, chopped fresh parsley, scallions, or herbs of choice.
