Introduction

Ingredients

    Cottage Cheese, 1% Milkfat, 16 oz
    Mozzarella Cheese, part skim milk, 8 oz
    Egg, fresh, 1 large
    Basil, 2 tbsp
    Broccoli, cooked, 2.5 cup, chopped
    Eggplant, fresh, 1 eggplant, unpeeled
    Parsley, 3 tbsp
    Spinach, cooked, 1 cup
    Zucchini, 1 cup, sliced
    Tomato Sauce, 3 cup
    Low Fat Ricotta Cheese, 1.5 cup

Directions

Start by mixing ricotta cheese, cottage cheese, egg, basil and parsley together until well combined. Then its time to layer!!

To layer place small amount of sauce in bottum of lasagna pan. Layer eggplant. Layer sauce and cheese, veggies, shredded mozzerella, cheese, sauce, veggies, noodles, sauce, cheese untill the ingredients are gone and the pan is full!

Bake at 350 covered for 30-45 min. Un cover and sprinkle with some cheese bake for anotehr 5-7 untill cheese is melted. Let sit to thicken. Serve warm.
