Introduction

This is a small version for lunch; serve over leftover Black Bean, Lentil, and Brown Rice burrito filling. The tomatoes were leftover from the Mediterranean Baked Mahi that I did last night. Ingredients

    4 oz Cod (fish)
    0.75 cup Del Monte Petite Cut Diced Tomatoes
    .25 cup Salsa
    0.25 cup Cheese - 2% - 4 Cheese Mexican - Shredded - Kroger

Directions

Pat the cod dry; season with salt and pepper and a little Cajun seasoning if you wish. Place in a baking dish that has been prepared with non-stick spray. Mix the salsa (I like hot habanero) with the tomatoes. Pour this over the fish. Bake in a 425 degree oven for 10 minutes; cover with cheese and bake 2-5 minutes more until cheese is melted and fish is desired doneness.
