Introduction

A spicy, very low calorie lentil curry good in a burrito or on rice, and accompanied by spiced yogurt and chutney. A spicy, very low calorie lentil curry good in a burrito or on rice, and accompanied by spiced yogurt and chutney.
Number of Servings: 4

Ingredients

    1 tbsp Olive Oil
    1/4 cup Onion
    1 tsp Curry Powder
    1 tsp Jalapeno Pepper, minced (or more, to taste)
    2 cups Vegetable Broth
    1/2 cup Tomatoes, chopped
    1/2 cup Potatoes, cubed
    1/2 cup Brown Lentils (dry)
    1 Bay Leaf
    1/2 cup Spinach, chopped
    1/2 juice of Lime
    Salt to taste


Directions

Saute onion, curry powder & jalapeno in oil in a nonstick skillet over medium heat. Cook until onion begins to brown, stirring often. Stir in broth, tomatoes, potatoes, dry lentils, and bay leaf. Reduce heat & simmer, uncovered, until lentils are tender, 20 to 30 minutes. Add spinach, lime juice and salt to taste.

Makes 4 servings.

Serving suggestions: Use as a filling in a tortilla or over rice. Great topped with Spiced Yogurt and Tomato Chutney.

  • I definitely want to try this... sounds delicious. I am thinking of substituting sweet potato instead of white... I wonder how that will taste... and maybe serving it over a bed of spinach instead of rice to save on calories. - 5/24/08
