Ingredients

4 tbsp Butter, salted MELTED
1 serving Designer Whey Choc. Protein powder
16 oz Ricotta Cheese, part skim milk
8 oz Cream Cheese
.50 tsp Vanilla Extract
1.5 tsp Almond Extract (by CRANKYGIRL)
1 cup Pyure Stevia ( Adjusted for sugar alcohol)
Tips
I put my stevia blend in my bullet and gave it a whirl. This made it a powdery confectionary feel and help it to dissolve without tasting gritty ( the new pyure is not dissolving as it should and the company is no help)
Directions
Preheat oven to 350. Line each cupcake tin ( Use reg cupcake size NOT muffin sized or it will change the macro count)
Mix almond meal butter and protein powder in a bowl and spoon about 2 level measuring tsp into the bottom of each cupcake paper. Bake for about 12 mins.
In separate bowl Mix the cheeses, stevia blend ,and extracts and mix using hand mixer or processor. After crust is baked pour about 1/4 of cheese mix into each cupcake. Bake for about 30-35 mins.
Remove and let cool on rack.
Optional mix some fruit preserves on top but this will change the carb count.
