    Tofu, extra firm, 0.2 block
    Garlic, 1 clove
    Green Peppers (bell peppers), 1 cup, strips
    Onions, raw, 1 cup, sliced
    Beans, black, 1 cup
    Salsa, 2 tbsp
    Cumin, 1 tsp
    Paprika, 1 tsp
    Pepper, 1 tsp


I take one whole green or red bell pepper and cut into strips. Take one half of an onion and cut into strips. Spray a pan with Pam and add the onion, bell pepper and garlic. Saute till the onion is clean and the bell peppers are tender. Reduce heat

Thoroughly drain tofu and crumble into large chunks into the pain. Add the beans, cumin, paprika, pepper and any other desired seasonings (chili pepper, salt, etc) and stir.

The tofu will further break down as you stir. Cook until the tofu is heated through.

Divide in to two plates and top with the salsa. You can also had shredded vegan cheese, and soy sour cream for a more festive breakfast dish.

    My picky husband enjoyed this with the salsa on top and added corn at the end as well... we forgot the cheese but that would really make it great! Our first tofu recipe - will definitely try again! - 9/5/08

  • This is my first time eating tofu. It wasn't bad. This recipe is good. I skipped the black beans because I didn't have them and used an entire block of cubed extra firm tofu. - 8/16/10

  • I love the spices and even my non-veg boyfriend liked it, a little too spicy for him though. I also omitted the salsa and beans. This is the first time I have ever ate tofu and actually REALLY enjoyed it. It's just like eggs but cruelty free and less calories. - 12/20/09

  • I made this for dinner and enjoyed it. It didn't knock my socks off, but unlike other tofu dishes I've tried, it wasn't revolting either. Actually, it was quite tasty and I would make it again. I used the whole block of tofu, the whole can of beans and 1/2 c. salsa adjusted the calories accordingly - 7/9/08

  • I had everything except the peppers, so put in some spinach at the end instead. It was very good! Very easy to make and the spices make it taste great. (I added chili powder for a little kick). Great recipe thanks! - 5/18/08
