Ingredients

2 cup Walnuts, organic-raw (MP) (by THREEMC)
2 cup Cashews (Raw & organic - Archer Farms) (by GIRLFROMSMYRNA)
1 cup Organic raw pumpkin seeds (by RUNNINGWILD)
1 cup shredded coconut, unsweetened (by MANALOA)
1 cup Dried Cherries
1 large Egg white, fresh
1 fl oz Water, tap
3 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
3 tbsp Maple Grove Farms 100% Pure Maple Syrup
1 tsp Vanilla Extract
0.5 tsp Cinnamon, ground
0.5 tsp Kosher Salt (by SRATERMAN)
4 oz Goji Berries
Directions
Preheat oven to 300 degrees.
Line baking sheet with parchment paper.
Add the first 3 ingredients to the blender or food processor. Pulse to chop the nuts, DO NOT GRIND into a fine meal.
In a large mixing bowl, whisk together the egg white with water until bubbly and slightly foamy.
Add the coconut oil, maple syrup, vanilla extract, cinnamon and salt to the egg white mixture. and whisk together
Pour the chopped nut mixture into the mixing bowl, add the dried cherries, shredded coconut, and goji berries. Stir everything together until well coated.
Spread the granola mixture evenly on the parchment lined baking sheet. Bake for 20 - 30 minutes or until golden brown and crispy stirring once after 10 minutes.
Remove granola from the oven and allow to sit for 10 minutes without stirring it, this is where the clustering happens, so be sure to NOT skip this step!!
Use a spatula to get under the granola and release the large clusters.
Once cool, store the granola in a 2 quart sealable glass jar
Eat with your favorite milk or yogurt.
Use as a topping for baked fruit dishes.
