Ingredients

½ cup Wild Rice
2 small Acorn Squash
2 tsp Olive Oil
¾ lb Ground Turkey Lean
1 onion, chopped
1 carrot, chopped
3 garlic cloves, minced
¼ tsp Cinnamon
2 tbsp Chives
¾ tsp Salt
¼ tsp Pepper
Directions
1) Cook wild rice according to package.
2) Preheat oven to 400 and spray cookie sheet with nonstick spray. Place squash cut side down on tray.
3) Bake squash 30 minutes. Scoop out squash, leaving just a bit around the skin. Place in bowl.
4) Brown turkey over medium-high heat until no longer pink. Add turkey to squash bowl.
5) Cook onion, carrot, garlic, and cinnamon over medium-high heat for 3 minutes.
6) Add veggies, wild rice, salt, chives, and pepper to turkey and squash mixture.
7) Fill squash shells with mixture and bake for 10 more minutes.
