Ingredients

    about 3 lbs (4 giant pieces) country-style pork spare ribs
    2 yellow onions
    1 very large Honeycrisp apple

    (I'm estimating the below ingredients as I just kind of dumped everything in)

    1/2 cup Apple flavored Balsamic Vinegar (I used Cinnamon Spiced Apple, from The Olive Tap - you can order from them online)
    1/3 cup Honey
    2 tbsp Liquid Smoke
    1 tbsp Ginger, ground

Tips

Serve with rice, or over salad, or with mashed potatoes - anything you like really.


Directions

Core and slice apple into thick pieces. Slice onions into rings. Spritz slow cooker with olive oil or non-stick spray. Add ribs (you can brown first if you like). Place apples and onions in slow cooker with ribs. Top with other ingredients (you could also mix them and use as a marinade which would probably be better but this was last minute for me). Cook on low for 7 hrs or so, until the meat still looks a little pink inside but falls apart at a touch of the fork.
