1 small green bell pepper cut in 1" pieces
1 small sweet red peper cut in 1" pieces
1 small cucumber cut in 1" pieces
1 pint cherry tomatoes quartered
1/4c. good olive oil
1/2c. feta cheese crumbles
2 t. mint
2t. cilantro
salt to taste
pepper to taste
Directions
combine all. serve at room temp or chilled. can be eaten as a salad, in a pita, etc. leftovers are wonderful stir-fried, but leftovers are rare.
