Ingredients

    1 lb. Lean Ground Turkey (Lean Ground Beef may also be used)
    1 t. olive oil
    1 medium onion, chopped
    1 cup frozen peas
    1 cup fresh or frozen green beans (I like to use the skinny haricot verts)
    1 cup sliced carrots, blanched
    1 cup beef broth
    2 T. Worchestershire sauce
    2 T. Cornstarch
    1 large potato, peeled and cut into chunks
    1 medium sweet potato or yam, peeled and cut into chunks

Directions

Heat oven to 375.

Cook the potato and sweet potato together in a pot of boiling water. Drain and mash with a little skim milk or buttermilk.

In a large skillet, heat the oil over medium heat. Add the onion, and cook until translucent. Crumble the ground turkey into the skillet. Cook until browned. Add the carrots, peas and green beans. Cook until the vegetables are nearly done.

In a small bowl, combine the cornstarch, beef broth and worchestershire sauce. Add to the meat mixture and bring to a simmer.

Spray a large pie dish or cassorole dish with cooking spray. Spread the meat mixture evenly in the dish. Top with mashed potatos, spreading them evenly to the edges. Bake for 20 minutes, until it's hot and bubbly and slightly browned and crispy on top.
