Ingredients

    2 tbsp Extra Virgin Olive Oil
    1 small Onions, raw
    74 gram(s) bell pepper, red, sweet, raw
    1 tsp Fennel seed
    .50 tsp Cumin seed
    .25 tsp Pepper, red or cayenne
    4 cup (8 fl oz) Water, tap
    1 cup Lentils
    .50 tsp Salt
    1 tbsp Lemon juice

Tips

The cumin is ground cumin


Directions

Heat oil in large saucepan over medium high heat. Add Chopped onion and Chopped medium red pepper; cook and stir 5 minutes or until tender. Add fennel seeds, cumin and ground red pepper; cook and stir 1 minute.
Add water , lentils and salt. Bring to a boil. Reduce heat to low. Cover and simmer 25 to 30 minutes or until lentils are tender. Stir in lemon juice. You can serve topped with yogurt and sprinkled with parsley (this is optional and not included in the nutritional content.
