Ingredients

    2 cup Lentils
    1 medium (2-1/2" dia) Onions, raw diced
    28 oz Canned Tomato, Crushed, 28oz (by DB81024)
    4 clove Garlic (minced)
    4.5 medium Carrots, raw (chopped)
    0.5 tbsp Garam Masala (by JACE520)
    2 tsp Ginger, ground
    0.33 tbsp ground Tumeric (by LESLIEB33)
    8 tbsp Jif Peanut Powder (by LUVLIGHT57)
    1 tsp curry powder
    12 medium Mushrooms, fresh (sliced)
    1 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
    2.2 tbsp Massaman curry paste j lek

Tips

Add or subtract veggies for what you have on hand.


Directions

Throw into crockpot and cook on high 5 hours (or until desired consistency). Add the coconut milk at the end before serving.
