Introduction

Fried zucchini probably isn't the best way to eat a vegetable, but its definitely delicious, and is great as a cook out side dish or as an entree. Fried zucchini probably isn't the best way to eat a vegetable, but its definitely delicious, and is great as a cook out side dish or as an entree.

Ingredients

    2 small zucchinis sliced thinly
    1 cup skim milk
    1 cup white flour
    1 cup canola oil
    2 tbsp seasoned salt

all of this doesn't end up consumed, which is why I didn't include full measurements in initial ingredient list.

Directions

Mix seasoned salt with flour and sprinkle on a large plate. Put skim milk in a bowl. Thinly slice zucchini, dip each slice in milk then coat with flour mixture. Heat oil in a frying pan at medium heat. Place zucchini in oil and cook for about 1 minute on each side, take out of oil and put on draining rack. Let it set for 5 minutes and serve. Makes 4 servings.
