Ingredients

    2# Ground Turkey - 97% fat free extra lean white turkey, Cooked
    8 oz Onion, sweet, raw
    2 medium Carrots, raw
    4 stalk, large (11"-12" long) Celery, raw
    2 clove Garlic
    3 1tsp Olive Oil
    1 can (29 oz) (401 x 411) Pureed Tomatoes
    2 cup Beans, red kidney
    .5 cup Yellow Sweet Corn, Canned
    2T tomato paste
    0.5 Cup Edamame, frozen, prepared
    2 cup Chickpeas (garbanzo beans)
    4 cup Chef's Cupboard All Natural Vegetable Stock
    2 T salt
    1-2 T Pepper
    1-2 T Cumin
    1-2 T Chili Powder
    1t Italian Seasoning
    1t Crushed Red Pepper


Directions

Chop veg and add to Stock Pot.
Add olive oil and minced garlic saute over low-medium heat about 10 min
Add seasonings. Saute another 2 minutes
Add turkey, tomatoes, tomato paste, and stock
Stir well, simmer 30 min
Add beans, corn, edamame
Simmer additional 15 min
Serve

    Incredible!
    Very delicious. as a Panera Chili LOVER I have to say it does indeed taste like the one at Panera. I found that using 2 cups of stock rather than 4 made it more chili like than soupy.
    Also, I used 2Tbs chili powder, 2tbs Italian seasoning, 1tbs of curry powder.

    Bad
    This recipe has way too much salt. No matter what I did, I could not get enough salt absorbed (with potato) to make it edible. It does not taste like Panera's turkey chili either. I threw it out. - 3/4/17
