Directions
Preheat oven to 425 degrees, spray large cookie sheet with Pam.
2
Take the Ritz package and with small knife poke two small holes in the side of package. Grasp the package with either hand and compress like a large spring-this will crush the Ritz. Open package with scissors and dump into medium bowl, repeat with other two packages, pouring into large bowl. {or use food processor}
3
Place ground chicken in bowl, with dehydrated onions, cilantro, granulated garlic. Mince onion in food processor, and place in large bowl with chicken mixture.
Using hands, combine mixture until incorporated. Make ball of mixture size of Ice Cream scoop, and roll in the Crushed Ritz. Pick up the ball with a handful of Ritz and press into the ball, forming into a cone-with a flat bottom (see picture above). Place on cookie sheet and repeat. Spray each croquette lightly with olive oil Pam
5
Place tray in oven for 10 minutes-check to see if getting browned. Turn oven down to 300 degrees and let brown for 5 to 8 minutes. Take out of oven and let cool for 3 minutes before touching.
6
While cooling pour gravy into microwave safe bowl, cover and heat on high for 1 1/2 minutes, and stir. Pour into gravy boat.
7
Place Chicken Croquettes on a large platter and serve with Mashed Potatoes.
