Introduction

Easily make risotto in your slow cooker! Easily make risotto in your slow cooker!
Number of Servings: 6

Ingredients

    1.5 cup Brown Rice, medium grain
    3 tsp VEGETA or vegetable stock powder
    3.5 cup warm water
    1 small Onions, diced
    1 Med. Green Bell Pepper, diced
    2 tbsp Creme Fraiche
    2 tbsp Parmesan Cheese, shredded

Tips

Skip the creme fraiche & parmesan for a vegan version - the rice is lovely & creamy without.


Directions

Spray slow cooker with oil. Add rice, stock, water, onion & capsicum. Cook on HIGH for 2-2.5hours or LOW for 4-5 hours.
Just before serving, stir in parmesan & creme fraiche.

Serving Size: Makes 6 servings as a side
