Introduction

This is a yummy summer salad with lots of crunch and sweetness. I have served it to guests at a barbeque as an appetizer salad, or eaten it for an entree lunch. Lots of protein and antioxidants! Ingredients

    Balsamic Vinegar, 2 tbsp
    Olive Oil, 1 tbsp
    Strawberry preserves, 1 tbsp
    Goat Cheese crumbles,1 oz
    Spinach, fresh, 2 cup
    Strawberries, fresh, 1 cup, halves
    Chicken Breast, no skin, 0.4 breast, bone and skin removed
    Almonds, 0.125 cup, sliced

Directions

Whisk together first 3 ingredients to make the dressing. Combine with remaining ingredients.

Can serve 2 as an appetizer salad or 1 as an entree.
