Ingredients

    Baby Carrots, raw, 2 large (remove)
    Cauliflower, frozen, cooked, 2 cup (1" pieces) (remove)
    Lentils, 1 cup (remove)
    *Brown Rice, long grain, 1 cup (remove)
    *Coconut Milk, .5 cup (remove)
    *Cumin seed, 1 tbsp (remove)
    *Coriander seed, 1 tbsp (remove)
    Chili powder, 1 tbsp (remove)
    Curry powder, 1 tbsp (remove)
    one medium yellow onion
    one cup chicken broth

Directions

using non stick spray, saute the carrot, onion and spices.
add the cauliflower and cook for about 5 minutes
add the lentils and stir to coat with spices
add coconut milk and chicken broth and simmer until lentils are tender
serve over hot cooked brown rice, preferrably brown basmati

    Great dish, need to add spices as desired my husband likes hot curry. I am vegitarian so used vegtable broth over chicken. Also good for husband for no meat Friday - 3/28/09
