Introduction

This is a soup that is a great main course. This is a soup that is a great main course.
Number of Servings: 6

Ingredients

    2 cups uncooked elbow macaroni
    1 large can of petie diced tomatoes
    1/2 stick of salted butter
    Salt
    Pepper
    Italian seasoning
    Shredded cheddar cheese

Directions

In a large pot empty the tomatoes. Fill the can with water and empty into the pot. Put in the butter. Bring to a boil. Once the tomatoes and butter are boiling bring down to a simmer.

While this is getting boiling cook the macaroni until it is almost done. I like to cook my noodles with a dash of Olive oil, some salt, and some italian seasoning for flavor in the water. The elbows should be about 3/4 expanded and still a little stiff. They will cook more in the soup itself. When the macaroni is finished drain it and add to the tomatoes.

Add salt, pepper, and italian seasoning to taste.

Allow to simmer for at least 30 minutes.

When you dish it up sprinkle shredded chedar cheese over the top and allow to melt.
