Ingredients

2 jalapenos (or to taste), seeded and chopped
1-2 green peppers (bell or mild chiles), chopped
20 oz ground turkey breast, 99% lean
1 can diced tomatoes with green chiles
1 (1 1/4 ounce) package low-sodium taco seasoning
6 large flour tortillas
1 (16 ounce) can fat-free refried beans
1 1/2 cups shredded light sharp cheddar or taco cheese, divided
1/4 cup cilantro, chopped
2 ounces light cream cheese, softened
1/3 cup light sour cream
Jarred salsa (green or red, your favorite)
Cooking spray
Directions
Preheat oven to 350 degrees.
Saute peppers and jalapenos in cooking spray over medium heat until soft. Add turkey and cook through. After turkey is cooked, add canned tomatoes, cook 2-3 minutes. Add taco seasoning per package instructions.
Spray bottom of casserole or baking dish with cooking spray. Combine salsa and sour cream, and spread a couple teaspoons of salsa on dish.
Combine cream cheese, 3/4 cup cheddar, and cilantro. Place 2 tortillas in baking dish. Lightly coat tortillas with 1/3 of cream cheese mixturel. Then add half of the turkey mixture and half of the refried beans. Sprinkle some salsa on top of this layer.
Place second layer of tortillas and add cream cheese, turkey, refried beans, and salsa as before.
Place third layer of tortillas. Cover with remaining cream cheese and cilantro, then top with remaining salsa and cheese.
Bake uncovered for 20-30 minutes, until heated through.
