Introduction

Ingredients

1 tbsp Vegetable Oil (or Canola Oil or Sesame Oil)
0.5 cup Red Bell peppers, sliver or chop (or 1/2 of pepper)
3 cloves Garlic (or 1 T minced garlic)
.5 cup, sliced baby Carrots
0.5 cup Peas, frozen
3 Scrambled Eggs (pre-cooked)
4.5 cup Cauliflower Rice (or 16 ounces)
.5 tsp Pepper, black
3 tbsp Low Sodium Soy Sauce
6 oz boneless, skinless chicken breast (pre-cooked)
Tips
You can easily add and/or substitute any vegetables in this recipe!
Directions
1. Pre-cook chicken
2. Pre-cook scrambled eggs
3. Sliver or chop bell pepper, mince garlic, slice carrots, and break cauliflower into rice size.
4. Heat skillet to medium heat
5. Add oil, add garlic and bell pepper and saute 2 minutes
6. Turn heat down, add remaining ingredients, cover, and cook 7 minutes
Optional - top with chives
The cauliflower will absorb any flavor including teriyaki, Italian seasonings or any seasoning!
