Introduction

Ingredients

2.3 cup Butter, unsalted
1 cup Granulated Sugar
2.3 cup Milk, nonfat (skim milk)
2 cup Flour, white
2 large Egg white, fresh
3.4 tsp Baking Powder
2 tsp Vanilla Extract
Tips
Original recipe calked for two whole eggs and 1 1/2 cups sugar..I lightened it up and also use skim milk..I suppose a low fat soymilk can be used also, although I haven't tried that yet.
Directions
In a medium bowl, cream unsalted butter until fluffy..Add the sugar and cream well..Add egg whites and vanilla.Beat well..
In another smaller bowl put in the 2 cups of flour and 3/4 teaspoon baking powder.
Measure 2/3 cup of milk.
Add flour mix, alternating wirh milk into the creamed mixture until well incorporated. .Do not overmix.
Pour mixinto a 9" loaf pan that has been sprayed well with cooking spray..Bake at 330 degrees for 1 hour, to 1 hour and 15 minutes..( very lightly browned)..Cool about 7 minutes.Flip out onto cooling rack. .COOL COMPLETELY BEFORE CUTTING OR MAY CRUMBLE ALITTLE. .Refrigerate..Also freezes well.
