Ingredients

    Slaw:
    1 tbsp Soy Sauce
    1 tsp Sesame Oil
    1 lime juiced
    1/4 bunch of Cilantro chopped
    1/2 red bell pepper thinly sliced
    2 large Carrots julienned
    1/4 head Cabbage thinly sliced
    1 Jalapeno Pepper minced (leave in seeds for more of a kick)
    2 tsp Ginger Root (reserve 1 tsp for patties)
    1/2 Onions thinly sliced (reserve 2 thin slices for patties)
    2 cloves Garlic minced

    Sliders:
    12 oz Pork, fresh, ground, raw
    1 tsp Salt
    1 tsp Pepper, black
    1 tsp ginger minced (reserved from slaw)
    2 tsp onion minced (reserved from slaw)
    8 Dinner Rolls ( I use homemade brioche or sourdough)

Tips

There will likely be leftover slaw. It is great plain or with any type of lunch meat, tofu or non meat patty. Omit the pork and substitute your favorite plant-based protein for a vegetarian bahn mi.


Directions

Mix all the slaw ingredients in a large bowl and let set for at least 20 minutes in the refrigerator. Make sure to reserve the ginger and garlic for the meat patties.

Heat a cast iron griddle, pan or flat top to medium heat. Spray with cooking spray (I prefer coconut).

Smash 8 1 1/2 oz pork patties onto wax or parchment paper into round patties roughly the size of your dinner buns. (Meat shrinks with cooking so it is ok to have a slightly larger raw meat patty). Sprinkle with salt and pepper.

Mix together reserved minced ginger and onion and place a pinch on the hot cast iron right before placing the patty on the surface. This will give the patty a caramelized ginger and onion flavor.

Cook each side of the patty until a slight crust is formed then flip. When you flip your patties place another pinch of onion/ginger on the hot cast iron so the other side of the patty gets the caramelized flavor.

Once patties are cooked through, serve on warmed bun with slaw mixture.
