Introduction

Ingredients

2 boneless, skinlees chicken breast
.25 cup lime juice
.5 tsp black pepper
2 Tbsp fresh cilantro, chopped
.5 tsp cumin
2 Tbsp olive oil
4 low carb, whole wheat tortillas (7-8")
1 cup lowfat colby-jack or cheddar cheese, shredded
optional additions like salsa or green chilies
Directions
In a ziploc plastic bag, combine chicken breasts, lime juice, pepper, cumin and 1 Tbsp of the cilantro and let marinate for at least 2 hours.
Grill chicken breasts until cooked through and slice into thin strips. I do this ahead of time with several breasts and keep on hand!
Heat 1 Tbsp of oil in skillet. Layer one tortilla then 1/4 cup shredded cheese, 1/2 (or less) of chicken strips, 1/2 Tbsp cilantro if desired, other optional additions and then the last 1/4 cup of cheese. Top with another tortilla. *Hint: chicken must be warm, so use right from the grill or heat up refrigerated chicken before adding!
Press down tortillas to flatten a bit and cook for 1-2 minutes until bottom tortilla gets crispy and then flip carefully, cooking 1-2 more minutes on the other side. Cover pan with lid during cooking to melt cheese if needed.
Repeat with the remaining ingredients. 1/2 of a whole quesadilla is one serving. Serve with a little fat free sour cream!
*I rarely use all of the 2 chicken breasts for 4 servings, but more than just one so the nutrition info is a little generous. (Or NOT so generous! LOL) Eat the leftover chicken on a salad!
