Ingredients

    Ingredients:


    *Brown Rice, medium grain, 2 cup (remove)
    Beans, black, 1/2 cup (remove)
    Sa-son Accent Seasoning Pack, 2 serving (remove)
    Rotel Diced Tomatoes & Green Chilies, 1 cup (remove)
    *Peppers, sweet, red, fresh, 4 medium (approx 2-3/4" long, 2-1/2" (remove)
    Cheddar Cheese, 1/2 cup, shredded (remove)



Directions

make the brown rice a head of time and that way it is ready when you want to prepare this dish.

In a Lg Bowl mix the rice, beans, sa-son seasoning packs, together..
Cut the Peppers in to halfs and clean.
Spray the pan with cooking spray and Line half of them in a baking dish. and then scoop the rice & bean mixer evenly in each pepper.
Then top with the tomatoes & cheese and the the other half of the pepper..
it is ready to bake in the oven at 350o for 30 minutes.

    I will make this recipe again. I used real poblano peppers so instead of rotel used crushed tomatoes as the poblanos had enough heat. I used chili beans instead of black--but otherwise followed the recipe. Simple, quick to put together, and tasty. - 5/7/10

    it was tasty. I will make it again. I was thinking about mixing the beans and riice in some cream of mushroom soup for a bit moreflavor but that is just my palate - 3/8/10
