Introduction

This is quick, but can be quicker: if you don't have the peppers or onions, or if you have no time to chop veggies, skip them, and it's still good. This is quick, but can be quicker: if you don't have the peppers or onions, or if you have no time to chop veggies, skip them, and it's still good.

Ingredients

3 pounds 80/20 ground beef chuck
1 and 1/2 cup Pace Chunky Salsa - Mild
1 medium (2-1/2" dia) Onions, raw
    6 rounded tsp Chopped Garlic,
2 peppers, large (3-3/4" long, 3" Yellow Bell Peppers)
    6 tsp cumin
    3 tsp coriander
    1/2 tsp cayenne pepper
    Salt and pepper to taste

Directions

Brown beef on high in large chef's pan or Dutch oven (to which you've added a bit of olive oil) by mashing it into one large patty in the pan and letting it get quite brown before you break it up. Add other ingredients, stir well and often while veggies soften. Simmer on low a few minutes. Serve topped with shredded cheese and sour cream.
