Ingredients

1.5 cups extra virgin olive oil
2 tbsp. red wine vinegar
1 lemon, juiced and zested
1.5 tsp. ground oregano
1.5 lbs. skinless, boneless chicken breast, thawed
4 cups romaine lettuce
1 large cucumber, peeled and diced
12 oz. feta cheese, crumbled
0.5 of a large red onion, chopped
4 whole wheat pitas
Directions
Makes 8 servings (one serving = 1/2 pita stuffed)
Combine olive oil, red wine vinegar, lemon juice, lemon zest, garlic and oregano in a bowl. Whisk to mix into a vinaigrette.
Cut chicken into strips. Soak with half of the vinaigrette mixture. Chicken can be grilled, weather permitting, or cooked in a pan on the stove.
Meanwhile, chop or tear up romaine lettuce in a large bowl. Add feta, cucumber, and red onion; toss with the remainder of the vinaigrette mixture. The salad should be very lightly dressed.
Cut pitas into halves; mix chicken with salad and serve in a large communal platter or bowl. People can stuff their own pitas!
