Ingredients

24 serving Sweet mini peppers
1 cup Cottage Cheese, 1% Milkfat
1/3 cup Parmesan Cheese, grated
1 large Egg
1 cup Spinach, fresh
1 medium (4-1/8" long) Scallions, raw
1 clove Garlic
4 slices Turkey Bacon, cooked and chopped
Tips
We found that the peppers tasted best cooked On a metal pan over glass because the peppers got a more roasted favor - yum!
Directions
Cut the top off 24 mini peppers, slice them length wise and clean out the inside.
Mince up the onion, and garlic. In a food processor or blender mix the cottage cheese, Parmesan cheese, egg, onion, garlic and blend well. Lastly add the bacon and spinach and give it a quick whirl or two.
Line a cookie sheet with parchment paper.
Stuff each pepper half with filling and bake at 375° for 15-20 min.
*Personal preference, we left them a little longer because we liked the roasted pepper taste the achieved.
