I love going through the fridge at the end of a week and throwing various soups together. This is a crazy healthy, tasty & easy one. I love going through the fridge at the end of a week and throwing various soups together. This is a crazy healthy, tasty & easy one.
Number of Servings: 8

Ingredients

    28 oz. can ground tomatoes
    32 oz fat free beef, vegetable or chicken broth
    1/4 head cabbage, shredded
    medium onion, quartered, sliced thin
    1/3 c carrots, medium chop
    10 oz pkg. frozen spinach, thawed
    1/2 tsp. crushed red pepper
    1/2 tsp dried basil
    3/4 tsp. dried oregano
    4 large cloves garlic, minced

Directions

Combine all in slow cooker. You can choose to cook on high (3-4 hrs) or low (8-10 hrs), depending on the amount of time you have. Adjust seasonings and serve. Optional: sprinkle with fat free grated parmesan cheese just before you eat. Makes 8 generous servings.
