Introduction

I added leftover strawberry shortcake topping to my standard muffin recipe. It was pretty good! I added leftover strawberry shortcake topping to my standard muffin recipe. It was pretty good!
Number of Servings: 9

Ingredients

    2 1/2 cups flour
    1.2 cup sugar
    2 tsp baking powder
    1/2 tsp salt
    1 egg
    1 cup milk (I used 2% for recipe calculator)
    1/4 cup canola oil
    1 cup strawberries, cut, slightly sweetened, with juices.

Directions

Mix dry ingredients together. Beat egg. Add milk and oil to egg. Mix into dry ingredients - mix fully but don't overmix or they'll be tough. Fold in strawberries.

(Note: there was so much juice with my strawberries, I probably could have eliminated the oil, which would bring the calories down.)

Bake at 400 degrees for 20 minutes.

Makes 9 jumbo muffins.

    O.K.
    I used a little less canola oil as suggested, 3/4 cup whole wheat flour and then 1 1/2 cups regular flour, and added 1/2 tsp cinnamon. I made 6 in the pan with 6 Bundt cups, and they took longer to cook, but looked beautiful. They turned out a little gummy and not incredibly flavorful. - 6/1/08

    Incredible!
    I used fresh strawberries! So yummy! I also got 18 regular sized muffins from this batch since I didn't have a jumbo muffin tin...so that cuts the calories of each in half!! - 6/1/08
