Ingredients

    2 cans Chunk Light Tuna in Water, drained
    1/2 cup Sweet Onion or 3 Scallions, diced
    1/2 cup Panko Breadcrumbs
    1 large Egg white
    1 tbsp Mayonnaise
    2 tbsp plain Greek yogurt
    Juice from 1/2 Lemon
    1 tsp Paprika
    1 tsp Salt
    1/2 tsp Black Pepper

    1 tsp Olive Oil in Pan


    *I substitute Panko with 1/2 cup Progresso in a pinch.

Directions

Heat oil in a large, nonstick pan, set over medium high heat. *Can substitute with spray cooking oil.

In a medium sized bowl, combine all ingredients. Using a 1/3 cup measure of tuna mixture, shape into 4 patties and place into pan, working in batches as necessary to avoid over-crowding pan. Using fingers or a spatula, gently flatten tuna patty to about 1/4" thick.

Cook tuna patties until crisp and golden brown on each side, about 2 minutes per side.

Serve immediately. Can place over greens for a nice large salad.
