Ingredients

    ROLLS
    Large pan of simmering water
    24 pieces of rice paper
    3 cups rice noodles (precooked and cooled
    2 cucumber , cut in long thin strips
    2 cups red pepper, thinly sliced
    2 cups grated carrot

    SAUCE
    6 Tbsp Tomato Paste
    3 Tsp Sugar
    Garlic
    ¾ Cup Hoisin Sauce
    ¾ Cup Peanut Butter
    ¾ Cup Chicken Stock

Directions

Place rice paper(1 at a time) in simmering water to soften(approx 15-20 secs)
Layer with noodles, cucumber, carrots and peppers. How much depends on how big you want them.
To make the sauce just combine all ingredients in a saucepan and simmer and stir until all ingredients are combined. Sauce will thicken as it cools.
Dip roll in sauce and enjoy
makes 24 rolls
