Number of Servings: 6

Ingredients

    1 package (10 oz) Peas, frozen
    5.3 tbsp Extra Virgin Olive Oil (1/3 Cup)
    .5 cup Parmesan Cheese, grated
    1 clove Garlic
    2 tbsp Pine Nuts
    7 serving Barilla Whole Grain Angel Hair (2 oz) (by WDWCHICK)

Tips

You can play around with the ingredients....add a different cheese or omit pine nuts to work with your tastes.


Directions

1. Cook pasta to al'dente.
2. Pan roast the pine nuts if they are raw. Cook slowly on a low flame in an ungreased pan. You will smell them when they are done. Stir regularly.
3. While the pasta is cooking, defrost the peas (but don't cook them fully) for about 2 minutes cooking in the microwave.
4. Reserve 1/2 C of the peas.
4. Blend remaining peas, EVOO, garlic, parmesan cheese, and the pine nuts. It's going to be really thick!
5. Reserve 2 C of pasta water.
6. Stir pesto into the pasta dish and add reserved pasta water as needed to reach the desired consistency. Stir in remaining peas.

Serving Size: 6 servings....just over 2 ounces of pasta each.
