Ingredients

    1/4 tsp minced garlic
    2 tbsp chopped onion
    2 tbsp chopped green onion
    2 tbsp green pepper chopped
    1/2 cup diced celery
    1/2 cup cooked lean ground beef
    2 tbsp salsa or chopped tomato
    6 large eggs
    Salt
    Black pepper

Directions

Spray a large pan with cooking spray
Whisk the eggs in a bowl and set aside
Fry onions garlic, and green pepper on medium heat until onions are soft
Add chopped celery to the onion mixture and continue frying on medium heat
Add the salsa or chopped tomatoes to the pan and fry for about 30 seconds
Season with salt and pepper to taste
Reduce heat to low and pour the whisked eggs in the pan
Continue cooking the eggs on low heat, then flip the omelette to cook the top side
Cut into 6 pieces and serve warm

    This was really very good. I eliminated two egg yolks (kept the whites) and put my cooked hamburger in boiling water and strained well to eliminate more fat before I added it back into the vegetable mixture. I also didn't have any bell pepper but subbed a half jalapeno which gave it a mild heat. - 9/14/15

    Very Good
    Calories are low because this feeds 6 people. I made this for supper.
    Otherwise it was pretty good. I left off a few ingredients and added a little cheese. I don't believe that peppers, celery or tomatoes belong in eggs!
