Calories are low because this feeds 6 people. I made this for supper.
Otherwise it was pretty good. I left off a few ingredients and added a little cheese. I don't believe that peppers, celery or tomatoes belong in eggs!

I made this and had enough for 3 meals. This was delicious and low enough calories I could add some avocado or a slice of cheese. Great with extra salsa or sriracha sauce Submitted by:

This was really very good. I eliminated two egg yolks (kept the whites) and put my cooked hamburger in boiling water and strained well to eliminate more fat before I added it back into the vegetable mixture. I also didn't have any bell pepper but subbed a half jalapeno which gave it a mild heat. Submitted by:
