Roasted Eggplant and Garlic dip
Eggplants were huge and cheap at the Sunflower market. BTW I love that place because they have great produce selection and a bulk foods section with any dry goods you'd ever need! Anyway, I bought two then didn't know what to do with them, so I decided to get crazy.
