    *Philadelphia Fat Free Cream Cheese, 8 oz (remove)
    Onions, raw, 1 small (remove)
    Eggplant, fresh, 4 cup, cubes (remove)
    Green Peppers (bell peppers), .5 cup, strips (remove)
    Salt, .25 tsp (remove)
    Garlic, 1 tsp (remove)
    Red Ripe Tomatoes, 3 Italian tomato (remove)
    Thyme, ground, .25 tbsp (remove)
    1 T olive oil
    1/4 c water

Directions

chop all veggies
saute in oil til tender
put in food processer with cream cheese and blend serve hot or cold
