Introduction

The carcass of a rotisserie chicken always has a little more chicken to give up. In this case, 5 ounces. Healthy, low fat/low sodium chicken broth or chicken stock is always in my pantry. Ingredients

    85 grams Carrots, raw
    5 ounces Chicken Breast (cooked), no skin, roasted, baked or grilled
    .5 cup, diced Celery, raw
    130 grams Onions, raw
    1.5 cup No Yolk Noodles
    1 cup Chicken Stock
    1 pat (1" sq, 1/3" high) Butter, salted
    2 cup (8 fl oz) Water, tap
    1 tsp garlic
    0.5 tsp salt
    1 tsp pepper
    0.25 tsp marjoram
    1 tsp thyme
    0.25 tsp basil

Directions

Cut veggies into small pieces (dice the onions and mince the garlic), then add seasonings and saute in butter for approximately 4 minutes. Add sauteed mixture to stock and water. Bring to a gentle boil and boil for about 8-10 minutes. Add noodles and boil for another 6-8 minutes. Tear chicken into small bit-sized pieces and add to soup. Cover and simmer for 20 to 30 minutes.

Serving Size: Makes approximately 8 1-cup servings.
