Ingredients

* Egg Beaters, 1/2 cup
* Tomatoes, 1/4 cup, chopped
* Ham, extra lean, 1/2 cup, diced
* Onions, raw, 1/4 cup, chopped
* Green Peppers, 1/4 cup, chopped
* 2 Mission , 6.5" Low Carb Fajita Size Tortilla
* Salsa, 2 tbsp
* Low Fat Shredded Cheddar or Colby Cheese, 1/2 cup
Directions
Chop the tomatoes, peppers, onions, and ham. Set aside.

Spray a frying pan with non-stick cooking spray and pour in the Egg Beaters. Pour in the tomatoes, peppers, onions, and ham. Stir until thickened. Remove from heat.

In another pan, or in the microwave, warm up the tortillas for about 30 seconds each. Place half of the egg mixture onto each tortilla. Top with salsa and cheese. Microwave another 30 seconds (if desired) to melt the cheese.

Wrap tortilla up by tucking in the sides, then rolling lengthwise. Serve.
