Ingredients

    18 oz Kirkland Perdue Chicken Breast Boneless Skinless
    3 tbsp Butter, unsalted
    1 cup Swanson Chicken Broth 99% Fat Free
    8 tbsp Meadow Gold Heavy Cream
    9 tsp Lemon Juice 'Real Lemon' 100% juice
    3 serving Laughing Cow Light Creamy Swiss Original Cheese (Serving = 1 wedge)
    1.5 tsp (C) Garlic, minced (by SHEILAHARVILLE)
    1 tsp Thyme, ground
    salt
    pepper
    paprika

Tips

*if using zoodles, prepare zoodles first, salt and drain in strainer in sink while prepping rest of food to remove moisture (I roll zoodles in papertowels about midway)
**substitute 1/4 cup parmesan cheese for laughing cow wedges
***I half the chicken breasts, so it takes about 15 minutes in the oven; baking time may take longer if chicken breasts are not halved


Directions

Preheat oven to 400

season chicken breasts with salt, pepper, and paprika to taste

melt 2 tbsp butter in skillet and sear both sides of chicken breasts (1-2 min per side)

Remove chicken to baking dish

melt 1 tbsp butter in skillet and add garlic, stirring frequently (1-2 min), add in chicken broth, heavy cream, swiss cheese, lemon juice, and thyme, and bring to a boil

Once cheese is melted, mix in zoodles (or spinach) and cook for 3-5 minutes.

Drain zoodles, and add lemon juice/broth gravy mixture to chicken in baking dish

Bake chicken in oven for additional 15-20 minutes (or until cooked through)

**Nutrition information does not include zucchini; add separately for accuracy
