Ingredients

    100 g Baby spinach
    2 tsp Olive Oil
    25 g Onion, sliced
    2 cloves Garlic
    1 Red chilli, deseeded and sliced (to taste)
    50 g Red bell pepper cut into strips
    50 g Yellow bell pepper cut into strips
    1 small Tomato cut into 6 pieces
    80 g Chickpeas (garbanzo beans), canned, drained

Tips

Add chilli with caution!


Directions

Cook spinach in about 5 tablespoons of water for 3 or 4 minutes. Meanwhile lightly fry the onion, garlic and red chilli in the olive oil for 2-3 minutes; then add the strips of red and yellow peppers. Add 3 tablespoons of water with the tomato pieces and the chickpeas. Cook for 3-4 minutes until the chickpeas are hot, stir in the drained spinach, and serve.
