Introduction

A cool summer salad . A cool summer salad .
Number of Servings: 6

Ingredients

    2 cups Fusilli pasta
    1 cup chopped tomatoes
    1 cup of sliced cucumbers (peeled if you choose)
    1 cup of diet Italian dressing
    1/2 cup grated parmesan cheese

Tips

Garnish with chopped green onion (nutrition information not included).


Directions

Cook pasta according to box directions omiting any salt. Drain and cool pasta. Mix the rest of ingedients together with pasta and refg. until chilled.

    Some great additions would be black olives, green or red onion, roasted red peppers, crumbled feta, fresh basil (which I wish I had on hand right now), and/or a little italian salami (diced up small). Sun dried tomatoes would be good too if you don't have any fresh ones on hand :) - 4/9/10

    This is how I always make my pasta salad and it goes like "hot cakes" I actually have to make 2 batches so my hubby and I can eat it throughout the week also! - 5/25/10

    I used Schwan's bow tie pasta mix which has peas, corn, carrots, and red bell pepper. I did not have cucumber on hand, but sure it would have been yummy. - 3/24/10
