Introduction

A cool summer salad . A cool summer salad .
Number of Servings: 6

Ingredients

    2 cups Fusilli pasta
    1 cup chopped tomatoes
    1 cup of sliced cucumbers (peeled if you choose)
    1 cup of diet Italian dressing
    1/2 cup grated parmesan cheese

Tips

Garnish with chopped green onion (nutrition information not included).


Directions

Cook pasta according to box directions omiting any salt. Drain and cool pasta. Mix the rest of ingedients together with pasta and refg. until chilled.

    Some great additions would be black olives, green or red onion, roasted red peppers, crumbled feta, fresh basil (which I wish I had on hand right now), and/or a little italian salami (diced up small). Sun dried tomatoes would be good too if you don't have any fresh ones on hand :) - 4/9/10

    I used Schwan's bow tie pasta mix which has peas, corn, carrots, and red bell pepper. I did not have cucumber on hand, but sure it would have been yummy. - 3/24/10

    I'll make this with whole wheat pasta and add a few table spoons of Fat Free Sour Cream to get a different consistency. And then lots of ground black pepper of course!!! - 6/10/09

    I've added scallions, peppers (any color), sun dried tomatoes and an other kind of veggie you think you'd enjoy in the salad. I also used a dash of Italian seasoning. - 6/2/17

    Pretty much the recipe I use, but I add about 1 tsp. of Mrs Dash garlic & herb seasoning. I often use fresh broccoli, bell pepper, green onions, carrots, celery, and black olives. Very easy recipe to use whatever you have at hand. - 5/13/11

    You say the calories per serving but not the serving size, what is it please? I really don't want to make it then have to measure it all out afterwards. Sounds like maybe 1 1/2 cups, is that about right? - 6/4/10

    I added other veggies and used an organic brown rice pasta (gluten-free.) The pasta absorbed all the dressing and I didn't have extra, so next time I will wait until serving before adding the dressing, OR - if made ahead - will add additional dressing right before serving.     This has been a long time family hit. Mine also has cubes of part-skin mozzarella cheese, some thin sliced carrots, and occasionally some peppers. Except now when I prepare it, I keep some of each of the ingredients separate to assemble my own portion-controlled portion. I am making this today. - 5/30/10
