Ingredients

1/4 cup, packed Brown Sugar
5 tbsp Butter, unsalted - divided (1tbsp & 4 tbsp chilled)
2 cup sliced fruit
1/4 tsp Vanilla Extract
1/4 tsp Cinnamon, ground
1/4 C Sprouts Organic Coconut Flour - 15g
1/4 C King Arthur gluten free multi-purpose flour
1 dash Salt
1/4 C cup Oats, Old Fashioned, Kroger , dry
2Tbsp chopped Walnuts
Directions
Preheat oven to 350*
Heat 1tbsp butter in a 6" cast iron skillet
Add chopped fruit and walnuts in a single layer and let cook for 1 minute. Remove from heat.
Stir in cinnamon, vanilla extract and salt and spread out to 1 layer again.
Mix together flour, coconut flour and brown sugar
Add 4tbsp chilled butter, chopped into small pieces
Use a pastry blender or hands to mix butter and flour mixture until it resembles course meal.
Stir in oats
Pour flour mixture on top of fruit mixture and bake for 15-18 minutes, until brown on top.
Can be served with whipped cream or ice cream, if desired
