Ingredients

    0.50 cup (8 fl oz) Yogurt, plain, low fat
    0.50 cup Butter, unsalted
    1 tsp Cinnamon, ground
    0.50 tsp Nutmeg, ground
    0.50 tsp Salt
    1.50 tsp Vanilla Extract
    3 medium (7" to 7-7/8" long) Banana, fresh
    1 tsp Baking Powder
    0.50 tsp Baking Soda
    0.50 cup, packed Brown Sugar
    2 large Egg white, fresh
    4 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)
    0.75 cup Whole Wheat Flour
    .75 cup Flour, white
    2 tbsp Hemp Hearts- raw shelled hemp seeds
    2 tbsp Chia Seeds Nature's Earthly Choice
    0.25 cup Olive Oil

Tips

If you want to reduce the fat, you can decrease to 1/2 cup total butter/oil. If you do, increase the yogurt to 3/4 cup to maintain the moisture level.

Seeds give this loaf nice fiber boost and added protein alternative to the nuts traditionally used. I used hemp and chia seeds for this recipe, but you may want to use something different that you have on hand like wheat germ, bran, poppy seeds, even sesame seeds or sunflower seeds. whatever, just feel free to be creative, this is a very forgiving and flexible recipe.

Oven temps vary a lot. Make sure to check your loaf for doneness with a wooden skewer. Check for the first time at 45 mins.


Directions

Preheat oven to 375 degrees
Grease a large loaf pan and set aside
Sift or mix flours, baking powder, baking soda and soda and set aside
Cream butter, oil and sugar with an exectric mixer
Add the eggs, banana and vanilla to mixture and mix well
Add the flour mixture, and yogurt to the bowl and continue to blend until smooth
Stir in coconut, and any seeds/add ins you like
Pour batter into your prepared loaf pan.
Bake approximately 50 minutes

Serving Size: 1 large loaf
